Class Description

Chris Marks is back at Premier Grilling for the 2nd and final time of 2012 to teach the 3rd part of our 3-part BBQ Class Series!  If you have already taken BBQ 101 and 201 with Rob Russell, Chris will be here to give you your BBQ Degree for Premier Grilling BBQ University! (BBQ University is signing up for all 3 classes...BBQ 101, 201, and 301.)  You may also register for this class individually if you prefer.

Chris is an 8-time American Royal Grand Champion, Jack Daniels Invitational Grand Champion, and winner of countless BBQ Competitions across the United States.  He is also the general manager of Ace of Hearts BBQ Specialties, Owner of Three Little Pigs BBQ Sauces and Rubs, and one heck of a teacher of all things BBQ!  If you want to learn how the pros do it, then this class is for you!

Class Description

Rob Russell is back to teach us BBQ 201.  If you think that BBQ is nothing but briskets, butts, ribs, and chicken, then this class is for you!  This class is part 2 of 3 in our BBQ University Series!  Rob will be showing us that the sky is the limit when it comes to a BBQ pit.  Learn how to smoke fish, wild game, desserts and more!

Rob has been cooking Competition BBQ for decades both in restaurants and on the circuit.  He is part of 8-Time American Royal Grand Champion BBQ Team Three Little Pigs, Ace of Hearts BBQ Specialties and the man knows his stuff!  If you want to learn how the pros do it, then this class is for you!

The Good-One Smoker Strikes Again!

The Good-One Smoker is the best BBQ Cooker on the market today!

You guys hear what we say about The Good-One Smoker, Lump Charcoal and Three Little Pigs Rubs and Sauces.  Do you ever wonder what our clients say? 

Greg and Zach Austin each purchased Good-One Smokers this year and attended our BBQ 101 Class with Rob Russell in February.  Greg was looking for a while on the best choice to replace his old offset tube smoker, and he chose the Good-One Rodeo after looking at many different cookers.  He liked it so much that Zach, his son, came in and got the Open Range for himself!  If that isn't saying enough about the greatness of these smokers...read on...

These two guys decided it was time to test their metal and headed to the 31st Annual Terrell Heritage Jubilee BBQ Cook-Off in Terrell, TX.  This is an IBCA Sanctioned event.  Their confidence on high after a great BBQ class in February coupled with their knowledge and love of barbecue, they entered and hoped for the best.  Out of 59 teams, not only did they do well, but they got 10th Place in Chicken,  5th in Brisket, and 4th in Ribs!  Now, that is consistency!  Those scores combined to earn Greg and Zach Reserve Grand Champion honors at their first ever BBQ Competition!  Well done guys! 

Zach said, "That smoker cooks so well, it almost feels like cheating...almost."

"Man, we cooked all three categories in that thing and had all three in there at one time at one point. Most people had several smokers trying to accomplish the same thing. With this smoker (The Good-One Rodeo), and watching the other competitors struggle with temps and fire, I almost felt like it wasn't fair. LOL. I did use a couple of techniques from the class (BBQ 101 with Rob Russell) that certainly helped. The lump charcoal (Good-One Lump Charcoal) is freakin' awesome to boot!  Now, I've got the fever for sure, and plan to enter more competitions this summer."

Whole-EE Cow BBQ!

What a cool event!

Premier Grilling may have to have one of these!  These guys are doing a whole cow BBQ and doing it right!  This may sound easy but turning a 900lb steer over an open flame is no easy feat!

Check out Vaca y Vino coming soon!  On April 22, chefs Emmett Fox, Louis Lambert, and Larry McGuire will prepare an Argentine-inspired Texas feast, Vaca y Vino, at the Bridges Ranch in Wimberley, which includes four-course menu consisting of steer, empanadas, Shiner Beer, Argentine wine, escarole, potato salad, tres leches, and various other dishes.

Join The Paddy Dash BBQ Competition!

The Paddy Dash 5K Run is on its 4th year and The BBQ Competition is the newest addition to this great charity event!  Paddy Dash benefits many local charities in Collin County, and this year we wanted to bring in some of the best local BBQers to spice it up!  The Paddy Dash BBQ Competition will be going on all throughout the day in conjunction with Paddy Dash and cooks will be allowed to start cooking right after the cooks meeting on Saturday Morning…around 8am.  There will be many other fun family activities including: bounce houses, silent auction, smoker raffle, product demonstrations, face painting, and more!  Proceeds will go to our great local and natrional charities listed below.
